Unfortunately, I was the boss in this case. I had started a new job as a manager two weeks before when the person who had been the acting manager before me told me I needed to look at the timecard of one of my employees who was working a lot of overtime. He said she had been mischarging for a while, and the security logs would prove it.At this company, whenever you came in before 7:00 AM or left after 6:00 PM Monday to Friday, you had to sign the security log. However, when I checked the security logs, she had not signed in or out any of the days she said she worked.I asked security for the logs back to the beginning of the year (about 5 months). I compared the log sheets with her timesheets and found a pattern of charging 12 hour days or weekend work where she did not sign the security sheets. She also worked some days where she signed in before 7:00 or out after 6:00 which were supported by the timesheets.I collected the information and went to my manager. He said I was new on the job and offered to handle this for me. I had worked as a manager in previous jobs so I told him I was hired for the manager job, I can handle difficult situations.I reviewed all the material with Human Resources and they agreed there was a pattern of mischarging. I had security ready when I called this employee into my office. I presented the information showing she had mischarged for the past 2 weeks. I asked if there was a reason for the mistakes on her timesheet. She said she was not feeling good and had left early on those days, but did not mean to mischarge, it was just a mistake.I had proof this had been going on for at least 5 months, so I asked if this had ever happened before. She swore this was the only time she had misrepresented her time, she was sorry and would approve of the time from the last timesheet being deducted from her next paycheck. I asked again if she had ever done this before and she said again this was the first time she had ever mischarged her time.I told her to take her belongings from her desk, and I had security there to make sure that was all she took. I really hated to do this, especially after 3 weeks on the job. However, if you are a manager, your job is to protect the company from theft, and getting paid for time you are not working is just that, theft.

My new job doesn’t comply at all with food safety standards. We make/sell ice cream. We don’t have temperature logs of product/freezers, we wash everything with bleach &soap, there’s zero product dating happening. What should I do?

If on the other hand, they ignore you and tell you to stop messing with thier system then you can happily find another job and report them to the Health authorities comfortable in the knowledge that you did everything in your power to help.As you say in your profile. Why do we use semi-log sheets?

Semi-log graph paper let's you conveniently grsph a logarithmic or exponential function. It lets you show that relation on a graph.
