I had a few extracurricular like glee club and chess club (pretty nerdy) but nothing spectacular except that I had taught myself electronics using an old kit that belonged to my father who passed away when I was very young.In addition to all the regular applications stuff like transcripts, interview and essays, there was a page on the application which was left blank for the applicant to fill with whatever they wanted. You could write a poem, make a sketch, draw a diagram, paste a picture, etc.I went to RadioShack and bought a recording chip, a little red push button, small speaker, battery holder and PCB board. I sandwiched the board on the back of the paper and placed the push button, speaker, battery and chip on the front and soldered the whole thing together. I wrote “press the button” on the front of the paper with an arrow pointing to the red button.It looked something like this, imagine a paper sandwiched in between the green PCB and the brown back part. Recruiters and people on admissions panel look for people who are willing to learn, have the capacity to absorb information, people who can work well in teams and people who can communicate professionally and efficiently. You must be able to quantify this.Willingness to learn and Capacity to learn are both based on the individual. As another answers pointed out, there are lots of online resources to learn and that none of the clubs will give you more knowledge. This is true(partly). Most learning at clubs is not done directly through peers alone. However it break barriers to clear doubts and learn from anothers experience). Lots of us refer/learn primarily from online sources.Learning to work in teams and learning to communicate can be done only in groups, And for this being part of a club helps alot. Not being in a club does not mean you'll never work in a team. It will only reduce the number of chances you will get to work/communicate with groups on specific topics. (Your discussions in your friends circle don't count, they are social discussions and not professional(no conclusion is reached)).Further, during an interview (during placements) and when writing your statement of purpose (for masters/PhD), you'll need to talk about your ability to work in a team. This is quantified better is you are part of a club(1+yrs in any club excluding NSS). About clubs just promoting dog work, it gives you an appreciation for the small stuff and gives you an idea on how what affects the outcome of a planned event.However, if I you are indeed a 2nd yr and were not able to get into any of the clubs, don't lose hope. Many of them have a second set of inductions. Try again, interact with the existing members.If you are uninterested in any of the clubs and feel that they do not represent you in any way, then don't join any club. Do what interests you (not what entertains you!) and you should be fine. Just make sure you can quantify what you have done/learnt.TLDR: Not joining a club will just lessen the interactions you have with other peers.
