My best experience - still vivid in memory after 30 years! - was at a five star restaurant in Vienna Austria, located at the Four Seasons Hotel. I lived in the city at the time, the local currency was the schilling, and the American dollar (the primary source of my income) was very, very strong against the schilling. The result - goods and services in Austria, priced in dollars, were extremely cheap!So, on my sixth wedding anniversary, my wife and I decamped to the Four Seasons.Plush sums up the decor. One thing indicated how seriously they were to showcase the food you ate there - in the ceiling above each table were a number of tightly focused spotlights which cast light directly onto the table in front of each chair. Your dinner was always going to be in that spotlight!At that moment, an idea surfaced, one I’d pondered from time to time. Here, finally, I might actually execute the idea!The waiter appeared with menus. I held up my hand. “No menus tonight. This is our wedding anniversary. Would you ask the chef to prepare us a celebratory dinner? We’ll trust his judgment. Ask him to show off a bit. I’m sure we’ll enjoy whatever he sends to us.”The waiter hesitated a moment. You could almost hear the wheels spinning in his head.“Once you’ve consulted with the chef, would you return and give us some advice on a bottle of wine that will carry us through the dinner?”More wheels-in-head spinning for a moment. “Yes, of course, sir.” And he departed. Five minutes later, he returned with a wine list, and after some discussion, we settled on an Austrian vintage. The the show began.We arrived at the restaurant about6:30 PM. We departed sometime between 11:30 PM and midnight. During those five-plus hours, we ate a dozen courses - all of them small in size but presented with flair and sophistication. Amazing culinary experience! All the more so because I’m not a gourmand, not someone who frequents five-star restaurants, not the sort of fellow who has the financial resources to dine like this!When at last the dessert course arrived, it lay upon large plates on which the chef had written in chocolate-syrup script (in German, of course) “Congratulations and best wishes on your wedding anniversary!” Along with it came another bottle of wine, complements of the chef.The psychological effect of that evening of dining was, perhaps, the biggest surprise of all. It sort of transformed me into a man who my lovely bride hardly recognized. In the cab on the way home, I declaimed to her an optimistic view of God, Michael and all archangels, the universe, and everything else.There’s a scene at the end of the film Babbette’s Feast in which a character extols just this sort of mood, produced by the excellence of Babbette’s culinary skills, deployed in the service of those who have never experienced such skill. When I saw that scene some years after this evening of dining, I knew immediately what that mood was, for I experienced it. I’ll never forget it.
