It's pretty much just having a good memory.Snape had an actual understanding of what he was reading.But as for why Snape was mean to her? Snape was mean to everyone pretty much, but it seemed like he was a little more mean to her because she was part of the Golden Trio, who broke all school rules and faced no repercussions for their actions. The Golden Trio thought that they were above it all, and Dumbledore was extremely lenient towards them
