I taught behaviour classes at a high school. These students do not buy gifts for teachers.I asked to teach Introduction to Foods to them.My principal already thought I was out of my mind shook her finger in my face. She said, “do you know how many knives are in the foods room? Do you know?”She reluctantly agreed and said she would be putting a security person In the room with me, and ‘nobody better get hurt!’ (What crap is this!)The course included food safety and handling, safe food preparation, measurement, use of kitchen tools, nutrition rules, the Canada Food Guide, introduction to baking, food presentation, and how to make soup from almost nothing, pizza and cookies. We got to eat what we made.So I laid the rules bare: safety procedures were not optional; if I suspected anyone had been to the Happy Tree (the spot under a big evergreen across the street where students would smoke up) they would not participate in the class or get to eat anything.In the end, all of them understood basic food safety and preparation. All of them could bake cookies, muffins, make apple crumble and baked apples and scones, make soup from vegetables, and make pizza from scratch beginning with the crust.The gifts they brought me were things they made at home by themselves as a result of taking the course with me.Those things, sometimes delivered a year later, were the greatest gifts.They took what they learned in the course into their lives. Nobody died. It’s all I ever wanted.

Because we do not need it. Europeans, and especially EU citizens, are protected by stricter laws on food safety and quality which ensure us that we eat better quality food. For instance, our flour can’t be bleached and our eggs can’t be washed. Europeans tend to shop frequently, so our food is less created for a superlong shelf life and more aimed at flavor and nutrition. Besides, by culture we are more used to eat food cooked from scratch and vegetables. This means that most Europeans tend to have more varied and healthier diets than the Americans (I am still taking about “averages”, I am pretty well aware that there are Americans who eat a nice and healthy diet, thanks). Forcing the addition of synthetically produced vitamins into candies, for instance, is quite pointless if your population (or at least most of your population) eats several portions of vegetables and fruit each day.

In a country with church-state separation, how do those with religious obligations tell what food is Kosher or Halal?They rely on private, 3rd party certification services, which define their own standards and have their own inspectors.Remember, food safety is something consumers generally want. Achieving it is a technical task. There is no special knowledge or skill that the government has to define and enforce standards. So, why have a government monopoly?
