With manual machines, baristas can adjust the flow and time-length of an espresso extraction, adjust the grind size and dosage accordingly, steam the milk to a very specific temperature and most importantly texture the milk foam in a way that is silky smooth and not rough.Truly experienced baristas have a deeper and broader understanding of coffee beans hence they can make any sort of coffee beans ‘work’ so they may not come out tasting like crap.At the end of the day, it’s not something a machine can do. An automatic machine doesn’t know what origin your coffee beans are or how old or how fresh your coffee beans are, so how would it know to adjust itself? It doesn’t. Only baristas or experienced coffee enthusiasts would know what to do with it, and that is what truly sets apart a barista and an automatic coffee maker, and ultimately…the quality of the cup.
