Sure, there were guys there, out on the prowl, some were fans of Elvis.We had played there off and on since the summer, and Roy the Owner had made enough money to really advertise the event. He ended up buying a lot of inventory from another dive bar, The Aztec Inn, halfway through the night. The cops made a few bucks by letting the place stay open until 4AM.The way 20 year old Wayne saw it—oh, and I felt like a fugitive because at midnight the drinking age was raised from 19 to 21 in Illinois—was that the main draw was from women who were my mother’s age. And once I got rid of that creepy thought, I figured, OK, their daughters came with them for kicks, maybe even some older aunts or even grandmothers. But certainly three generations.I free-associate that night with the television shows from that era. The younger women all looked like Marsha from The Brady Bunch or Chrissie from Three’s Company. Maureen McCormick and Suzanne Sommers. And they all wore Babe cologne. Remember Babe?I thought I was getting my wallet stolen and I turned to see a woman who looked like Suzanne Pleshette, Bob’s wife Emily on The Bob Newhart Show, either trying to dry hump me or simply push my head down so she could get a better view of Sideburns.The grandmothers were the darlings, though. This was a time when Elvis was still being mourned and it was totally insane. I still have cassette tapes of several evening sets, but I don’t need to listen to those to remember that one single night, soaked in sweat at the start of winter.

I’m a huge fan of the cedar-plank seasoning available from McCormick. It just gives the salmon such an incredible taste.Of course, we also like dill on sauteed salmon, sometimes basil-butter. Our best trick is to sear the salmon on both sides and then finish off in a hot oven. The salmon is exquisitely moist on the inside with a nice crust on the outside.My favorite pairing with salmon is oven-roasted asparagus, plus oven-baked sweet potato.
