The French, like the Spanish, are used to drink an espresso a little less dense than the Italians. We spell it “expresso.” A little more water can be added to get an “allongé” still quite stronger than brewed coffee. Milk and sugar are tolerated, the latter always proposed, but an expresso is considered “true” and best without them.We drink coffee for breakfast and after lunch, sometimes in the afternoon or to conclude a long dinner.A classic popular expresso laid on an equally popular free “newspaper.”Brewed coffee is unfairly considered a lower manner of drinking coffee, sometimes referred as soup, “jus de chaussette” (socks juice), “pisse d'âne” (donkey pee) or “rinçure” (rincing water). You will barely never find it in a café, and the closest you can get is an “américain” which is an expresso diluted with water.The majority of cafés and restaurants in France are provided coffee beans from a handful of companies (e.g. “Cafés Richard” may supply at least 75% of cafés in Paris). My feeling is that the industrial quality of the beans and the way the coffee is prepared have slightly increased over the years. The majority of cafés and their customers are satisfied with it, and have no appeal for a better, richer craft roasted coffee.People also don’t go in cafés to taste a good coffee, they go there to have a social time. Whether quickly reading the newspaper or talking at the counter, betting on a horse race, sitting outside for a talk and a cigarette, a coffee is just an excuse to sit and gather. Provided it’s not bad and cheap, nobody wants to care about the coffee!Expresso and newspaper at the counter: a (slightly stereotypical) morning classic.Nevertheless, everyone expects a certain quality from their expresso and if you learn to appreciate the “subtleties” that lie behind the bitterness of an expresso properly made with industrially roasted beans, you will most likely never be disappointed.That was only my French point of view though! Very often I heard my German and Scandinavian friends complaining about how bad the coffee is in Paris and how much France lacks a culture of coffee (which infuriates me a little). They consider our expresso to be a bitter harsh bland drink (supposedly being nowhere near the richness of an Italian espresso) and deplore the lack of their delicious comforting brewed coffee…And they may well be right! I acknowledge they have a better consciousness of coffee quality but with my French arrogance I sometimes prefer to think that it takes time to appreciate a French expresso and that they will fall for it when their tastebuds eventually mature!Northern Europe, turning brewed coffee into an art: something a French person would most likely consider a joke.Finally, homemade coffee varies in every French house. Most people use an electric drip coffeemaker, while some have a proper expresso machine. Some drink instant coffee, some use a moka and others make brewed coffee. Very few people buy good coffee beans and the majority buy bad-to-acceptable industrial ground beans found in supermakets.Nestlé’s Nespresso and other coffee capsules machine have also been quite trendy these last ten years. They produce a visually appealing expresso, and depending on the capsules you can get a disgusting coffee, most likely a bland one and once in a while a good expresso.
