How do restaurants use psychology to manipulate our spending and eating habits?
A really clever psychological trick I noticed in few restaurants in North India.Though Indian restaurants bills include a service charge for the service provided by the restaurant waiters, some folks still leave some cash change back as additional tip.If paid in cash, the tipping part comes usually from the change that waiter brings back after getting the bill cleared. For example, the bill is Rs 225, I pay Rs 300, the waiter brings back Rs 75 change , I keep Rs 50, and pay Rs 25 tip.Now comes the psychological trick. Most folks associate more value with a currency note, than with a coin, hence usually return all coins as part of the tip.In India, Rs 10 comes in both forms, a note as well as a coin . The note form is the most abundant form, and the coins are rarely circulated, but in these restaurants, I observed a reverse pattern.A Rs 10 note :A Rs 10 coin :Now, lets observe two variations of a hypothetical scenario.I go to a restaurant, the bill including the service charge comes to be Rs 115, I pay Rs 150Scenario A : The waiter brings back Rs 35, three 10 rupee notes, and one 5 rupee coin. What would be a most probable change I would leave ? I guess mostly the Rs 5 coin ( total Rs 5), or one Rs 10 note and one Rs 5 coin ( total Rs 15) , but I would mostly keep the other notes with me.Scenario B : The waiter brings back Rs 35, one ten rupee note, two ten rupee coins, and one five rupee coin. What would be the change I would leave back ? All coins ! Two Rs 10 coins, and one Rs 5 coin ( total Rs 25 )This is how they manipulate the customer into leaving more tips, by giving most of the change in form of coins ;) .
