“On a 1978 Ford F-100 Custom 302 V-8, what is the fitting in the engine block between the oil filter and the fuel pump?”This one?The small zinc dichromate (gold-colored) fitting is a, as the note mentions, an oil galley plug — it prevents oil from squirting out of the block there. That photo, by the way, was lifted straight from a Ford Motorsports instruction sheet.Such holes are either cast or drilled into the block at the factory to allow the oil galley to be properly machined and cleaned to ensure sufficient oil system function. They also provide a convenient spot to install an oil pressure sending unit to run either a gauge or a light in the instrument panel, to alert you if/when oil pressure is low. Such plugs are typically removed before an engine block is cleaned at a machine shop prior to a rebuild, to give any sludge or debris that might be trapped inside the oil galley a means of being rinsed out. In addition to being used for oil pressure sending units, such ports are sometimes good sources of pressurized oil flow for accessories like a turbocharger.The larger gold-colored fitting is a cooling system core plug. Removing it gives immediate access to the engine’s cooling system passage around the adjacent cylinder. You don’t want it to leak or pop out, because you’ll lose coolant from it, which could lead to overheating. Like the oil galley hole, the factory puts the core plug holes in the block to give them a means of removing the remains of the sand molds after the block is cast. After that, they’re a handy way to ensure that a block gets thoroughly cleaned inside and out when doing a rebuild: machine shops will remove all the core (or sometimes called ‘freeze’) plugs before cleaning the block, which allows any built up gunk inside the coolant passages to exit the block during cleaning.Basically, if you don’t know what you’re doing, messing with either plug could cause problems for your engine, so do be careful.I hope this information is helpful.
