As someone who attended a culinary arts academy in the US, I can say my experience in an actual school was just -ok-My instructor taught word-for-word from the text book, and while he had amazing skill in the kitchen, he lacked applicable real life knowledge in the field. However, in my school we were assigned to apprentice under different Chefs each week beside our main instructor, this was enormously valuable to me.I got to apprentice under a Japanese Master Sushi Chef, The CEC of Nestle, Former patissier to the Queen of England, a musician’s personal chef, and several culinary business owners. These people’s skills took me from someone who was nervous about making cookies, to a business owner who people come to, show me a picture of a pastry, and I can make it.I would say my experience was unique, and that in my academy they favored students who put forth the most effort, with the most skilled Chefs to tutor them. I graduated as valedictorian of my class, while some students are still in low paying jobs as chefs. In the US the academies are not as well standardized as other countries such as France and Japan.Because of this lack of standardization, I feel that a lot of people who go to academies may leave disappointed. They are very expensive, stressful, and there just isn’t a lot of skilled people out there who sign up for a full time teaching position.I would recommend, if you are thinking about going to a culinary academy, research it, and ask to view a class. If the instructor is the type that just goes by the book, I would avoid it. Culinary is equal parts chemistry and passion, a book only teaches chemistry.

Do I really need a university degree to succeed in life?

If you can afford it go, please do so as you will meet various kinds of people, do assignments and read books which you will never read on a normal day. Back in my old middle school, students were required to take a quarter (half a semester) of each of the four elective classes they had- Art, Computer, Music, and of course, Introduction to Culinary Arts.While Art was by far my least favorite out of the four, Culinary Arts class was undoubtedly by overall worst. I had many mess-ups over the course of the class, despite it only being a quarter long. I quickly gained a reputation for messing up every recipe we were assigned. Even something simple like monkey bread managed to come out at least a little bit off.However, there is once incident that stands clearly above every other accident- The Snickerdoodles.I was a bit of a chubby kid, so I was absolutely excited for to make these cookies, not to mention it was our first ‘real’ cooking assignment. However, I was a bit too excited, and didn’t read clearly as I measured and got the ingredients.As every chef or cook ever knows, the difference between a teaspoon and a table spoon can be enormous, especially when using baking soda. I learned this the hard way, as I ended up putting a heaping table spoon into the bowl.When the cookies finally came out of the oven, I was so hyped- The room smelled wonderful, other groups had fantastic looking cookies, and I could not wait to eat my own. So imagine my face when I take out the tray and these ugly, dumping-shaped and rock-hard little balls come out of the oven. My group each tried one, and needless to say, they were disgusting. And we all knew it was my mess up.I was for sure embarrassed that day, and disappointing. My supposed to be fantastic cookies were disgusting. That of course didn’t stop me, and in my pride I ate all of them, claiming they ‘weren’t that bad’.They were horrid. But hey, lesson learned!
