Yes, it does.But it may not exactly be the kind of added flavor that you’re looking for.As you keep frying the oil over and over again, it starts to degrade and gets darker in shade. Little particles of the last few batches of food that you cooked gets added to the oil.(from Restaurant Business News[1])Taste and scent are closely related, and oil that’s become dark is going to start smelling bad, like oil change garage bad. Some of that smell will be imparted to the food.More importantly, the oil will have started to (if not already) polymerize, that is get gooey and thick. Whatever you cook after will start to feel and taste greasy and even bitter and rancid.Now, you could fight this off by filtering the oil a few times. After all, if you have $10–15 of canola in a home fryer, you want to get the most money out of it.(from Amazon[2] - 4.5L fryer)This would give the oil a bit more life to it, though you would probably have to add a little more oil to top it off. Depending on what you’re frying, the oil could last up to 7–8 uses (unbreaded french fries) to 3–4 uses (anything with flour).But once it gets very dark (say, from amber to a deep brown), it’s given up the ghost and you should get rid of it.
