I would rank Seoul a bit higher though, I feel there are more interesting things to do and see there. Shanghai wins over Seoul food-wise though (and Tokyo beats both on that front).

In June 1984, I had the great privilege of inventorying the walk-in freezers at the Yongsan Commissary (which sold food directly to GIs), the Seoul Food Service Supply Depot (which supplied the mess halls) and the 121st Evacuation Hospital. Which sounds like a lousy mission until you realize it was over 100 degrees outside, and here I am walking around in an arctic survival suit counting cases of frozen food.

Kimchi made an impression. So good I had to go look for it in a supermarket back home to go with my meals at home.Kimchi JJigae (Kimchi Stew) - was to crave for. Bold and spicy aged kimchi and fatty pork belly in a lipsmacking flavourful broth that was magic in the chilly air of Seoul where I relished it ... accompanied with soju - awesome!Beef Bulgogi was thoroughly enjoyable. But the beef wasn't sliced, it was curled around the bone and it was brilliant, marinated with gochujang sauce. Best way to enjoy BBQ with a vegetable wrap, raw garlic and gochujang paste.The cold weather must have got to me. The spicy Gamjatang (pork bone soup) was a blessing. Fall-off-the-bone tender pork seeped in an addictive milky bone soup flavoured with gochugaru and gochujang.You know you're in Korea when the noodles are made from sweet potato. Japchae was simply delightful, so delectable I had mouthfuls with rice. Barley tea to refresh.There were a few other outstanding dishes that were delicious and hearty - 'Ginseng Chicken' was nourishing, had a really thick root in the chicken, and a breakfast to remember - a liquidy rice porridge dish cooked with strips of bacon. Can't find this in Korean restaurants in Malaysia.Seoul food - sunshine for the soul.
