Why did birds beak change from evolution but not the flower in order to make nectar easily reachable?

My thoughts are that there is no benefit to the flowers making nectar more easily accessed. The purpose of the nectar is to attract bees, birds, bats, butterflies, moths, or other critters that will be dusted with pollen while negotiating the path to the nectar. If the nectar were easily accessible without jostling the flower, there is no pollination and the species could become extinct. The plant offers nectar as bait to gain the ability to cross-pollinate and create seed. There are even plants that trap and hold pollinators by attracting them with the scent of nectar or pheromones, but offer no nectar in the end. Pollination is the end game and not a free buffet for other species.

They are much larger than the birds so they often struggle to defend themselves and their eggs.
