When choosing courses, how important are previous course evaluations for university/college students?

I am not sure what you mean. Students don't have access to course evaluation forms after they are completed and turned in. Those are for faculty eyes only. And possibly for administration. But I doubt they look at all of them individually. They might look at the meta-data.
