If Palpatine had been picked up by the Jedi as a child he’d… still have been a sociopath. The outcome wouldn’t be good.Though we’re talking Legends material at this point, the novel Darth Plagueis expounds a lot on Palpatine’s history and motives in such a way that aligns fairly well with the type of person he develops into in the films and comics. In short, Palpatine is a high-functioning sociopath. He does not experience emotion or attachment the way normal people do, developing an intense distaste for his father’s lack of ambition at a very young age, growing fascinated with collecting artifacts belonging to the ancient Sith, and eventually murdering his entire family in order to get a head start on developing his own Dark Side powers at the behest of Darth Plagueis. All of his misdeeds, and the eventual murder of Plagueis himself, Palpatine does without the slightest hint of remorse. Though he is adept at feigning the motions of friendship and cordiality with others, the truth is that he regards people as his tools, possessions, or obstacles. This aligns well with his later actions in his relationship with Vader and his various schemes to consolidate power.Although this is a fictionalized portrayal of a sociopath (one where absolutely everything goes his way), it stands that Palpatine’s development as one started very early. If Plagueis hadn’t picked him up then he simply would have found other outlets and maybe made a mistake.The question of what the Jedi would make of such a person is… interesting. On one hand it’s unlikely they would sense negative emotions in him, especially at a young age. That may even be one of the reasons they didn’t sense him as a Dark-Sider to begin with.On the other hand it seems like Yoda would pick up on the fact that something isn’t quite right about him, and if for any reason at all he doesn’t feel like someone should be trained then it’s off to the Jedi Service Corps with them. Young Palpatine would have then languished in obscurity until, eventually, I just bet you Darth Plagueis finds him anyway.Supposing that Palpatine learns to play the game well enough, it’s possible that he could be trained as a Jedi for quite a long time — long enough to achieve the rank of Master and then gain access to the forbidden parts of the Jedi Archives, where they keep many Sith artifacts that they’ve been hoarding. In-between he’d use his position as a Jedi to seek out and retrieve other Sith artifacts for himself, accumulating them more readily and easily than he would have living as a noble on Naboo. There is a very good chance that he would befriend Dooku, and the two of them would share similar ideas. It stands to reason that the two of them would eventually usurp the rule of the Sith from whoever holds it at the time, be it Darth Plagueis or someone else entirely. It’d more or less be a repeat of the partnership between Darth Revan and Darth Malak.It should be readily apparent that Palpatine in any continuity other than the one where he’s a noble on Naboo doesn’t have the path to political power necessary to become the Supreme Chancellor. That being the case, there would not be much reason for him to be groomed as a Sith apprentice.
