These strategies for managing workload are generally the same as in any other job (some of us also try to read and act on the same principles of efficient time management and productivity that everyone else does), and as Gene mentions, many of us manage the workload poorly and hence work very long hours, while some are very efficient and observe strict schedules (they have also learned to say "no" more often).The main thing is that the tasks we perform vary from, say, our industry counterparts. We have certain rhythms or seasons that have more variations during a year (e.g., summer term work schedule is different—might undertake more travel), and due to special circumstances. Workload and tasks types are different during a sabbatical which we get once every 7-8 years; when someone has plenty of funding, we can skip doing proposals for a season, or if one did not succeed in the last round of competition, s/he may need to work harder during upcoming proposal season to improve the chances of having funding for research students.We all need some priority order for the tasks, and so some of us work on the best effort basis (there is unlimited amount of work we could do, so we may not be able to do some lower priority work).
