There are some good answers here — and I second the answers about ‘no substitutions’ being applied to heavily discounted meals. There are at least two answers not yet discussed.High-volume restaurants — meaning restaurants who produce such an absurd volume of the same product (a cheesesteak for example) that they only come one way. They obviously don’t need to cater to a specific population in order to stay in business and made the calculation that it is much more streamlined if they offer only limited options.High-end restaurants — If you have ever been to a FINE dining (Michelin stars, Rosettes, AAA diamonds, Zagat) you will often see no-substitutions on the menu. This is very likely because of two reasons. The first is obvious — the chef is presenting you with a dish which meet their standards — to alter it to meet the customers needs might make the dish less appetizing. You may think that it is your choice — but the restaurant has a reputation of quality to uphold, and the best way to uphold that is to make sure that every dish is exactly the same as the one before that. This way all customers are treated equal— and so no negative or positive feedback is isolated.Furthermore, at high end restaurants, ingredients may already be incorporated into a part of the dish hours in advance of service. While dishes may appear to be simple they are usually very complex with some sauces and garnishment being prepared hours in advance of service. There is no way to pull out a single ingredient from a sauce or a chutney and most of the elements in the final dish have multiple layers of this.… and I think the other obvious answer is that sometimes the customer is just lost and the requests become ridiculous. These customers are not allergic — so much as they are picky.One of my favorite movies is Zodiac (2007). In that movie the main character goes on a date to an Italian restaurant with his future wife. So it is already a cream sauce.The woman was most likely trying to order Penne with an Alfredo Sauce — which in America looks like this:Which is made from butter, heavy cream, parmesan cheese and pepper.Even though in Italy it looks like this:Which is literally butter, parmesan and pepper (no cream).So long story short is that sometimes the customer doesn’t have a clue — and even an attempt to satisfy them might end up backfiring. The waiter might write “Penne in a cream sauce” on the ticket. The kitchen reads it and says ‘oh no problem… Vodka sauce is a cream sauce’ and serves her the dish as normal. Now, flash forward to 15 minutes later, the woman sends the dish back because it “Isn’t what she ordered” — Who is in the wrong here?While it might seem minor to request a sub — sometimes it creates problems in a kitchen which are not reflected in the price of a meal…. and that is why is it is discouraged.

Is she right?No they are not.Every restaurant should respect a special order where an ingredient is omitted, provided that you don’t ask for compensation or substitution.Many restaurants will offer some special, combo, or promotion with the note “no substitutions” - and that’s absolutely fair. But should you ask them to omit something - provided that it’s possible to do so - they should accommodate that request at no extra cost.For example - cheese is included on every sandwich at Subway. It’s built into the price. If you want a sub with no cheese, they should easily accommodate that. If they don’t, they are just being difficult with you.Now if you want a discount on your sub for omitting the cheese, or you expect them to substitute some specific alternative that’s either unavailable or available at an extra cost (i.e. “vegan cheese”), then they shouldn’t be expected to do it.Or it may not be possible to omit the ingredient you want. Suppose you ask for your salad dressing to not have any pepper in it. The dressing came to the restaurant pre-made, and they don’t have the ingredients to make more. No business can be expected to satisfy all such requests.A few years ago I was at the airport, standing in line to pick up a “breakfast sandwich” at a counter-serve restaurant. This very well-dressed woman pushed her way to the front of the line and complained that the sandwich she was served did not have, in her words, “real cheese” on it. It was your standard slice of processed cheese, exactly as what was shown on the picture, and how it was described on the menu. The restaurant did not have any “real cheese” to offer her at any price, and if she didn’t want the processed cheese she knew she was getting, she had ample opportunity to ask for no cheese, or go elsewhere.
