PDF Editor FAQ

What was the snobbiest thing you've seen a customer do in a restaurant?

In the 1990s I was working in a very authentic Japanese Restaurant/Sushi Bar in Cleveland; serene design with some really great pieces the owner had brought from Japan. The female servers were in kimonos and the male servers in happy jackets. This was before the big sushi boom, the regular guests were familiar with sushi, but plenty of other people had not experienced it or even heard of it, so we were good about educating new guests. We had one guest seated at the small sushi bar up front, telling us how he had been in Hawaii and had learned so much about sushi. Instead of asking questions or even having a conversation he wanted to educate us or show how much he knew. He was telling us all sorts of information we already knew quite well; ie. raw tuna is called “maguro”; even though the pronunciation was questionable. As servers working for tips, we of course were just smiling and nodding, why correct him. Finally he ordered a couple of different sushi; the sushi chefs carefully prepared and artfully arranged them and we presented it to him. His first comment was “oh look avocado” used his chopsticks to grab the green paste next to the pickled ginger and pop it into his mouth. Of course anyone who is familiar with sushi knows that the green paste is not avocado, but rather wasabi, a potent Japanese horseradish. The man’s face lit up and you could almost see the steam coming out of his ears. Luckily the wasabi kick dissipates rather quickly and some water helped to bring him back to some semblence of normal.Of course we tried not to laugh until we got out of his sight, but he seemed a lot more humble after the incident. Some times justice is served.

Why is food in Japan so salty?

I can tell American tendency with three cases.1) My wife (American) wants to drink soy based sauce after eating Tempura. I told her you shouldn't drink it because it's too salty. She misunderstood the custom we drink dipping sauce after eating Soba (buckwheat noodle). Waitress at Soba restaurant pours Soba-yu (hot water which boiled Soba) into the dipping sauce. We drink it like a tea. So, it contains less sodium and drinkable but Tempura sauce isn't. But my wife still likes to drink Tempura sauce.2) I attended a luncheon meeting with two American executives at a Sushi bar. Both Americans put a piece of nigiri-zushi in soy sauce plate for a long time. Japanese people always dip soy at a corner of nigiri-zushi. We don't soak it in soy sauce. Never.3) I invited an American friend to my Japanese dish with plain white rice. He asked me to use soy sauce. He poured soy sauce over the white rice. Whenever he comes for a dinner, he does the same. I warn him that it's not good for his heart. But he wants to do that every time.In these cases they wanted to get more saltiness. It's their preferences. They can't blame Japanese food.
