Why can't astronauts eat normal food--like a bowl of spaghetti and a salad?

They can. Spaghetti has long been a common meal for astronauts. It has been eaten on the Moon. Salad is more difficult, simply because it doesn’t preserve well, but it has been eaten, in space.The challenges of space food are primarily in preservation and preparation. Food needs to be densely packed into a launch vehicle, usually without refrigeration, maintain its quality and safety for months at a time, and then be easily prepared for consumption, with very limited kitchen facilities, and consumed in the microgravity environment.Early space meals were very similar to the MRE (Meals Ready to Eat) that are designed to be carried into battle, by soldiers. Over time, we’ve evolved those meals to be far more sophisticated. This is more than just a luxury, it is critical for long duration spaceflight.
